Vegan paella - a Spanish classic in a vegan version.

1. peel onions and garlic, cut into cubes.
2. peel carrots and mushrooms, wash, cut into slices.
3. heat oil in a frying pan, add onion and garlic, fry. Add carrots, diced peppers and mushrooms. Simmer until the mushrooms release their juice, then evaporate it.
4. add canned tomatoes. Stir the whole thing, saute for a while and add rice. Stir the contents of the pan, fry for about 2-3 minutes, then pour a little water. Simmer covered until the rice absorbs the water. Then add a small amount of water, continue to simmer until the liquid is absorbed. Repeat the operation so that the rice is soft.
5. season the whole thing with salt, pepper. Transfer the finished paella to a plate, sprinkle with lemon juice.
