Pizza on chickpea dough - an interesting variation of traditional pizza, full of protein.

| canned chickpeas | 350 gram |
1. preheat the oven to 200°C.
2. slice the zucchini lengthwise in half and then into slices.
3. cut the tomato and onion into slices.
4. Place the prepared vegetables on a baking sheet covered with baking paper and drizzle them with 1/4 olive oil. Season with salt and pepper.
5. bake the vegetables in the oven for about 30 minutes.
6. Set aside two tablespoons of water and combine the rest with chickpea flour, 2/3 of the remaining olive oil and salt.
7. Line an oven-safe pan with baking paper and fill it with the batter.
8.Place the pan in the oven and bake for 20 minutes, until the cake is golden brown.
9.Meanwhile, drain all but a small amount of the liquid from the chickpeas and peel the garlic clove.
10.Using an immersion blender, blend the chickpeas, cumin, salt, pepper, lemon juice, remaining olive oil and garlic until creamy.
11.When the cooking time is up, separate the dough from the baking paper. Spread the hummus, and top with roasted vegetables and fresh arugula.
