Halibut with tomato and mango salsa - an exotic offering for fish lovers.

1. wash and dry the fish, then season on both sides with salt and pepper.
2. wash the mango, peel off the skin. Cut the flesh from the stone, then cut it into cubes.
3. pour boiling water over the tomatoes for a minute, drain and pour cold water over them. Remove the skin, cut in half and remove the seeds. Dice the flesh itself and mix it with the mango.
4. peel the onion, finely chop it and mix it with the mango and tomatoes. Wash the parsley under running water, dry it and finely chop it. Then add to the vegetables.
