Potato salad with chanterelles - a summer proposal full of flavor and aroma.

1. peel the potatoes, put them in a large pot of salted water and boil for about 14 minutes until tender.
2.Meanwhile, clean the mushrooms, shorten the stems and fry in a pan without oil for about 8 minutes.
3 Tear the chicory root into small pieces and place in the bowl with the mushrooms.
4 Drain the cooked potatoes, let them cool for a while, and then cut them into thin slices. Then add them to the salad.
5 Pick the parsley from the stem and add it to the salad. Season with salt and pepper and drizzle with walnut oil. Mix well.
