Beet chops with arugula - a vegan version of classic chops with an unexpected ingredient.

1 Put all the ingredients in a large bowl and mix with your hands until the mixture is sticky. If the mass is not sticky enough, add more oil and flour.
2.Stick the cutlets together and place on a baking sheet lined with baking paper.
3) Bake for 30 minutes at 200°C.
4.Halfway through the baking time or after 20 minutes, gently turn the chops.
5. Serve with vegetables or with a wholemeal bun in burger form.
