Barley pancakes with cottage cheese and cherries - delicate pancakes with unusual flavor.

Recipe for 4 servings.
1. cook barley groats according to the manufacturer's recipe on the product package. Let cool.
2.Put cottage cheese in a large bowl and crumble it with a fork until it has a heterogeneous but firm consistency.
3. add eggs, cooked and cooled barley groats, cinnamon, cardamom, dried ginger and xylitol to the cheese. Mix the whole thing very thoroughly.
4.Add whole wheat flour to the mixture and knead the dough until it becomes loose, but quite elastic.
5. with floured hands form medium-sized pancakes from the resulting dough. Immediately fry them in a heated, fat-free skillet, about 1.5-2 minutes on each side.
6. prepare the cherry sauce: thaw the frozen cherries by heating them in a covered pan. Then, add honey and fry the fruit, stirring thoroughly without a lid until the whole mixture thickens and excess water evaporates from the cherries. Finally, add chopped fresh mint.
