Baked rice with fish and vegetables - a flavorful dinner in one dish.

| white rice | 100 gram |
| cod, fresh, skinless fillets | 70 gram |
| striped cut veggies, frozen | 200 gram |
1. chop the onion finely.
2. scald tomatoes, peel and dice.
3. simmer the Italian vegetables in a pan, add the tomatoes and onions. After a few minutes pour a little water add salt and simmer.
4.When the vegetables are half soft, add washed, diced and lightly salted fish, add olive oil and simmer until tender.
5. cook the rice according to the instructions on the package and, after draining, mix with the fish cooked in the vegetables. Season and sprinkle with the juice of half a lemon.
6. put everything into an ovenproof dish and put in the oven for about 5 minutes. Sprinkle with parsley before serving.
