Asparagus with parsley pesto - a special dish for special occasions.
| garlic | 1 clove |
| olive oil | 2 tablespoon |
| parsley root | 6 teaspoon |
| tomato | 1 piece |
| asparagus | 4 piece |
| salt | 2 dash |
| pumpkin, seeds | 3 tablespoon |
1. peel the asparagus, cut into smaller pieces and cook in water with a pinch of salt.
2. prepare pesto: blend parsley, pumpkin seeds roasted in a dry pan, garlic and salt. Add oil gradually until the right consistency is reached.
3. drain the asparagus, mix with the pesto and diced tomato. Season to taste with salt and pepper, if desired.
